In Kyustendil, the greengrocer follows the rhythm of the land. The word comes from „green“ – that first abundance after winter: watercress, nettles, leeks, young spinach. When nature gives a sign, the household responds. The recipe changes according to the season, according to what is available, according to caring hands.

The filling is made from fresh greens – lightly salted, awakened by pressing between the palms. Sometimes with cheese, sometimes with butter. In winter, the zelnik becomes thicker, deeper in flavor – with sauerkraut or dairy products. Food speaks the language of the times.

Its shape has character. The filling is gathered in the middle – concentrated, rich, surrounded by an elastic crust. There is no spillage between the sheets. There is a core. A golden surface on the outside and juiciness inside. A pie that fills and brings people together around the table.

In this workshop we will get into that rhythm.
